STEP FOUR... LET 'EM SMOKE!


This was so enjoyable!

Honestly, this step probably only lasted about five hours or less, because time was limited. I used a "hot smoke" where the fire is actually cooking the meat while the smoke was flavoring it, and it worked amazingly. I really, really, can't wait to do this again!

They turned out very similar to the expensive smoked chubs at the grocery store, but the experience was much more enjoyable and the price was much better too. We'll have a video about this project out eventually, but I'm in love with these photos too! Check them out!
