Coffee Cake with Potato? Want to know how?

I started with a puzzle, as we lacked ingredients for making bread, such as Baking Powder, Choco Powder, and Banana for Banana Cake. I thought of another way to bake a Cake or Bread whatever was available in the kitchen cabinet. Until I saw what was available was just Coffee and Potatoes.

In making Banana Cake, you need a banana. I thought that instead of bananas I would change it to potatoes. In baking or making Chocolate Cake you need Choco Powder and milk, but I replaced it with Coffee Powder and water instead of Choco Powder and Milk. And lastly, since I don’t have Baking Powder, I used Baking Soda.


- 2 Cups All-Purpose Flour
- 3/4 Cup Coffee Powder
- 1 Cup Sugar
- 1 Tbsp Baking Soda
- 1 tsp salt
- 2 Large Egg
- 1 Medium Potato
- 1 Cup Normal Water
- 1/2 Cup of Oil


1. Soften the potatoes in the casserole in hot water for 15 minutes. Prick the potato with a toothpick to see if it is soft, and refrigerate and peel. Place in a bowl and mash it well then set it aside.

2. Preheat the oven while mixing the ingredients. In a bowl, combine the salt, Flour, and Baking Soda, mix it well then set it aside.

3. In a separate bowl, pour the sugar, coffee powder, water and mix it well until the sugar dissolves, then remove the coffee bubbles. Pour the cooking oil and 2 eggs and mix well until all the ingredients are combined.

4. Slowly pour the wet ingredients into the dry ingredients and slowly mix until the dry and wet ingredients combine and thicken. Prepare and grease the loaf pan then pour the mixture on it.

5. Bake for 45 minutes or until it passes the toothpick test. Remove from the oven and let it cool down. Serve, share, and enjoy with a cup of coffee or tea!

Its very easy to do and delicious! Remember, if you don't have Baking Powder, Baking Soda is fine. And if you don't have Baking Soda, Baking Powder is fine. Enjoy!
