After breakfast this morning, I wanted soemething cool and light for lunch. I decided on a smoothie as a quick fix. I love strawberries, so this was my chance to utilize them since they'd been in the refrigerator for a while.
You can use any fruits and veggies you have handy. My ingredients today for this strawberry smoothie are the items I already had in the refrigerator:
- strawberries (5)
- peaches (1/4 cup)
- cantaloupe (5 slices)
- carrots (1/4 cup)
- sour cream (2 tblsp)
- organic milk (1/2 cup)
- ice cubes (2 cups)
- nuts (1/4 cup)
Next, I placed the ice and milk in the blender. You can use less if you want your smoothie a bit thicker.
Then I diced the fruits and veggies and added them in.
Third, I added the sour cream and nuts; then blended on low speed.
Blend for about 2 - 4 minutes. Then check to see if you need to add any additional fruit or veggies, according to how thick you want it. Add additional sweetener if desired.
Voila, a perfect lunch to drink that's full of fruits, veggies, and nuts that's cool and satisfying.
