I am here again with another contest entry.

To the business of the day.
As a Nigerian there are many meals specific to different ethnic groups, different tribes or communities.
But the one I will be talking on today is the one generally known by all the groups, tribes, People and different cultures.
I deeply apologize I will not have to add a picture to this reason been that I don't have one and wouldn't want to make use of somebody's own.
I will be talking about the generally known type of dish/meal called JOLLOF RICE( THE NIGERIAN JOLLOF RICE) I WILL SHOCK YOU THAT EVEN THE POPULAR FEMALE RAP ARTIST # CARDI B. HAVE GOTTEN A TASTE OF IT ON ONE OF HER VISITS TO NIGERIA.
The Nigeria jollof Rice is one meal popularly made in almost all regions of the country.
It is know for it easy and fast preparation procedures, also for it tasty nature depending on the chief.
Having known the meal, I will like to share with you guys the elements contained in this great meal.
This great meal contains the following elements.
- Long grain parboiled Rice
Tomato and Tomato Paste
Most of the ingreedients are cooked one pot of which Tomato and pepper form the base.
For areas where sea food is the main source of protein like AKWA-IBOM STATE, sea food often take the place of chicken, or meat. Some of this sea food include;

Having mentioned the elements needed permit me to brush us through the recipe. It will be brief but accurate.
When preparing a Jellof Rice, Building a flavor base is very important, (as stated above in the elements needed).
I will advise not to be in a rush take your time and get the recipe right you will enjoy your meal.
For building up a flavor base, You start by cutting/slicing the onion while your Oil (Either vegetable oil or the one we call Red/Palm oil) should be on the fire, allow the oil to get hot a little for like 1 to 2 munites the put in your tomato, stir your tomato and add your onion. This adds deep and rich tomato flavor. You allow it to be on the fire for about 3-4munites and don't forget to stir continuously.
Add the ginger or garlic and cook along with the tomato paste for another couple of munite by the time this is ready you will notice the aroma,
Add a little Blended Pepper, I say a little because you have previously added ginger so you don't suffer the wrath of ginger and pepper later on. By now you should have added sum amount of water not too small not too much to keep the process going.
Finally, you add other ingredients like; thyme, curry powder, salt and seasoning cubes. Allow to boil for sometime then add your rice.
Once the rice starts to boil reduce the heat to medium-low immediately and cook until the rice is done.
Serve with fried chicken and also a nice cold juice. A little something to blend the process.
I will simply say it is the food I consume mostly.
This meal is mostly involve in weeding occastions, burial ceremony.
I have been opportune to attend a friends weeding and also a brothers weeding ceremony it is what is mostly acceptable cause of its vast nature. Every body in the country seems to be acquainted with the meal.
But I will warn you can only enjoy this meal when it is been prepared for family consumption.
Cause in occassions it is likely to be prepared by many hands and so you wouldn't get the best of it.
