Good morning my Fruits and Veggie Friends! Do you like Pudding? I know many of you love chocolate how about chocolate pudding!
Any takers? Breakfast perhaps?
I remember growing up we were always thrilled to have special pudding treat. Do you remember making pudding in a cloud? Whipped cream with pudding in the center just out of the freezer, a real dream dessert. (I remember making it for Mr. Bird when we were first married, he just loved it. I haven’t bought processed pudding for many years because I’ve found something even better!
Since we’re celebrating Fruits and Veggies Monday today would be the perfect day to share! A big thanks to our founder @lenasveganliving and host @plantstoplanks! Without their energy and inspiration we wouldn’t be celebrating together each week! Both inspire us to eat healthy and lead healthier lives!
We'll be traveling again tomorrow, I thought prepping for breakfast tonight would be a great idea!
Cacao Chia Pudding
- Cacao (1/4 cup)
- Chia Seed (1/2 cup)
- Almond Milk (1-1/2 cups)
- Yacon or Maple Syrup (4 tbsp.)
- Vanilla (1/2 tsp)
- Bird’s Coconut Yogurt
- Fresh Peaches, Blueberries and Bananas
- Slivered Almonds for topping!
Mix the Cacao, Syrup and Vanilla in a small bowl. Whisk with a fork or whisk to create a smooth mixture. Add the milk and whisk again until smooth.
Add the Chia seeds and whisk again. I love Chia seeds! They’re so versatile used as an egg replacement, thickener or in puddings they really add a nutritious energy punch. Did you know the word “chia” is a Mayan word for “strength”? Just 2 tablespoons of Chia contains 4 grams of protein and 11 grams of fiber. Chia seeds have amazing antioxidant qualities too. It’s quite the superfood! Stir your pudding once again after about 30 minutes then cover and refrigerate overnight!

Somehow I’ve been able to find amazing peaches lately! We love them but usually we’re lucky to enjoy one or two each season! I’ll take advantage while I can!
